My go-to breakfast right now.
I want it simple, delicious, and nourishing. This chia pudding has been a long-time favorite, but right now Iâm obsessed. The best part? You can meal prep it and have it ready in the fridge.
I mix coconut milk, collagen, vanilla powder, chia seeds, and frozen blueberries. You can actually make it the same morning, just pop it in the fridge for 10â15 minutes. Or prep a big batch in advance so itâs ready to go when you need it. So easy and so good!
On top I add crunchy granola, hemp seeds, almond butter â and of course, a matcha on the side. Yum!
